Pickled Cauliflower

​​​​​​If you're looking for a way to add some excitement to your meals, than pickled cauliflower is for you! Salty, tangy and crunchy, all the things you look for in a pickle. They are absolutely delicious and addictive and make for a healthy, refreshing snack.  

Ingredients

  • 1 1/2 cups water

  • 1/2 cup white vinegar

  • 2 bay leaves- optional

  • 2 tablespoons sea salt

  • 1 large garlic clove, smashed

  • 1 tablespoon granulated sugar

  • Cauliflower, roughly 500grams- cut into bite sized florets 

Instructions

  • In a pot, add the water, vinegar, salt and sugar. Heat up and stir continuously until the salt and sugar dissolve.

  • In a clean jar, stack the cauliflower florets until the jar is full. 

  • Pour the water, vinegar, salt and sugar mixture into the jar, making sure all of the cauliflower is submerged in the vinegar mixture. Allow to cool.

  • When cool, seal the glass jar tightly and allow to sit for 5 days at room temperature in a cool dark place. Refrigerate afterwards and use within one month.
